For each of three courses he will not only select a suitable wine and pour you one glass of it, he’ll tell you all about why he thinks you should try it – in fact, he’ll give you a complete description of its provenance. And it’s all done in an enthusiastic and friendly way. Quite a revelation if you thought this place was only famous for its malt whisky. Well done, William Birch.
